Carrying only the essentials in the Rocinante, John Steinbeck had little to offer when inviting curious strangers in for conversation. Even in his minimalistic camper, Steinbeck never failed to offer a warm cup of hospitality to his guests (while bribing them to camp on their land). Early in his trip, Steinbeck established a signature drink to offer guests – coffee with applejack.

Since coffee really isn’t my cup of tea, I’ve created a sweeter, more indulgent version of Steinbeck’s drink with a spoonful of homemade caramel sauce and a swirl of creamer. Caramel Applejack Coffee will be your new fall favorite!

For a non-alcoholic version, substitute the apple whiskey for cider.

 

Ingredients

Coffee

1 oz. Apple whiskey (I used Jim Beam Apple)

1 oz. Half-and-Half

 

Homemade Caramel Sauce:

1 cup brown sugar, packed

½ cup half-and-half

4 tablespoons butter

1 tablespoon vanilla extract

 

Directions

Make the caramel sauce:

In a saucepan combine 1 cup brown sugar, ½ cup half-and-half, and 4 tablespoons butter. Warm over medium-low heat, whisking gently until smooth. Add 1 tablespoon vanilla and continue whisking for another minute.

The sauce is finished! If you are using the caramel right away, remove from heat and set aside. Otherwise, transfer to a container and chill until you are using it.

 

Make the coffee:

Prepare coffee and pour into a mug, filling it about halfway. Add 1 oz. apple whiskey (or more, if you’re feeling bold), 1 oz. Half-and-Half, and 2 oz. caramel sauce.

Swirl with a cinnamon stick, and share with your guests!
