Last Christmas, my mom gave me a copy of Lauren Graham’s memoir Talking As Fast As I Can with a copy of Eat Like a Gilmore. Needless to say, I was in heaven (aka Stars Hollow). I couldn’t do a review of Lauren Graham’s book without including recipes from the ultimate authority on Gilmore eating, Kristi Carlson.
I decided to pair these Double Chocolate Brownies with Lauren Graham’s book because they have an intense chocolate flavor that only the Lorelai Gilmores of the world can handle, and they pair well with coffee! Below, I have included this recipe’s intro from Carlson’s fabulous cookbook and the accompanying recipe:
Over the years, Lorelai asked Luke for countless favors, from fixing windows to borrowing thirty thousand dollars. Some favors, she didn’t even need to ask for – he just did them without any provocation, like sharpening the blades on her ice skates, shoveling her driveway, and building her a chuppah. The entire foundation of their friendship was built on Luke doing things for Lorelai.
Considering everything he’d done for her, the first time Luke asked Lorelai for a favor – her “yes, sure!” answer should have been a given. Buuuut the favor involved Rory spending time with Jess, to tutor him. So for Luke to get a “yes,” he knew he needed to sweeten the deal. He did, with these brownies. With twice as much cocoa as regular brownies, these are sure to get a “yes” out of anyone.
Ingredients
Butter or shortening, for preparing the pan
½ c Flour, plus extra for preparing pan
1 c Unsweetened cocoa
½ t Baking soda
½ t Salt
2 Egs
1 c Sugar
1 t Vanilla
½ c Melted butter
¼ c Whole milk
Directions
Prepare oven and pans: Place oven rack in the center of oven. Preheat oven to 350 degrees Fahrenheit. Grease and flour an 8×8-inch baking pan. Set aside.
Mix dry ingredients: In a medium bowl, mix flour, cocoa, baking soda, and salt. Set aside.
Mix wet ingredients: In a medium mixing bowl, mix eggs until yolks and whites are fully combined. Mix in sugar and vanilla. Add melted butter. Stir to combine.
Make batter: Add dry ingredients to wet ingredients, mixing just enough to combine. Add milk and mix to combine. Pour batter into prepared baking pan.
Bake brownies: Place pan in oven. Bake for 25 minutes. Test for doneness by inserting a toothpick into the center. When toothpick comes out clean, remove pan from oven. Let cool for 5 minutes. Gently turn pan over, until brownie pops out. Cool whole brownie on cooling rack for 10 minutes. Cut and serve.
Makes 16 brownies.
