Although there are many dining car scenes throughout Murder On The Orient Express, we are not told what is served to the passengers (though we can imagine it would be a deliciously luxurious meal). We do know that eggs are served, and where there are eggs, there are usually omelettes.
Below is the recipe for a simple classic, a ham and cheddar omelette. While a recipe for this isn’t necessary, I do explain a few tips and tricks to omelette making that will elevate your cooking to first-class quality.
Ingredients
Butter, for greasing pan
3 eggs
Shredded cheddar cheese
Diced ham
Salt
Black pepper
Directions
Whisk together eggs in a small bowl. The key here is to whisk them well so that your eggs are smooth – this takes a little patience. Once you can lift your whisk and the eggs fall in an even stream, they are ready.
Bring a nonstick pan to medium-low heat and add a pat of butter. Be generous with your butter so that it coats your entire pan. Your butter should not be sizzling at this point, it should just be melting onto the heated pan. Tilt the pan to be sure the butter reaches all parts of the pan.
Add your eggs to the pan. Pour them into the center, then tilt the pan so that it spreads evenly. Add a pinch of salt and a grind of black pepper. You don’t need much – just enough to add a hint of flavor. If you can, try to use freshly ground black pepper – this makes a world of difference in your cooking!
On one half of your omelette, add diced ham and cheddar, spacing the pieces out evenly. Do not overload your omelette – otherwise, the eggs will not be able to hold your ingredients. Watch as the eggs cook and lift from the pan underneath. If you notice that the center of your omelette is not cooking, tilt the pan so that some of the egg runs to the parts that cook faster. Just before your entire omelette is cooked, carefully flip the side without the ingredients to the side with the ham and cheese. Let it cook for a few more seconds, then remove onto a plate.
